Traders in 7 Days to Die have a restock period that happens after every 3 days. This restock gives players a whole new arsenal of items to choose from. The restocking is applied to all traders of Navezgane. The day was very overcast, i remember in a very early version the trader doors opened only when they first experienced sunlight - no sunlight - no open trader, regardless of time of day. As for removing all the traders I think you would have to turn on loot respawn. Maybe set it to a very high day count just to make sure you aren't just looting the same buildings over and over.
